Ingredients:
- One medium-small potato
- About a quarter cup each of two different berries - I used blueberries and blackberries
- A small amount of oil or melted fat (not pictured) - I used olive oil
- About a quarter cup of fresh greens/herbs - I used Italian parsley, but anything with some flavor to it will do; feel free to use a mixture of things (Lurker suggests pine needles, I haven't tried this yet but have confirmed that they're edible. She also suggests dandelion greens, which are bitter.)
- About an eighth of a cup of nuts - I used pine nuts
- One chicken or duck egg or five quail or songbird eggs
- Optional, but recommended if using sour or bitter ingredients: 1/2 tablespoon honey
Dice the potato into 1/4-1/2" cubes. If using large berries, cut them to a similar size. Spread the potato cubes and berries on a lined baking pan, drizzle with oil, and bake at 350 for 30 minutes.
While the potato mixture is baking, coarsely chop the greens and nuts.
Remove the potato mixture from the oven and combine it with the greens and nuts; add the egg and honey (if using) and stir to coat; return it to the oven for another 30 minutes.
